Serves 6

Citrus-Marinated Pork Chops
Ingredients Measure
Chipotle Chiles; Dried 2
Pork Loin Or Rib Chops; * 6
Frozen Orange Juice; Thawed ½ cup
Vegetable Oil ¼ cup
Lemon Juice ¼ cup
Orange Peel; Grated 2 tablespoon
Salt 1 teaspoon
Clove Garlic 1
Orange; Medium 1

Preparation

  1. Pork chops should be cut about 1/2-inch thick.
  2. Orange should be cut into 6 wedges.
  3. Cover chiles with water. Let stand until softened, about 1 hour. Drain and finely chop.
  4. Place pork chops in a shallow glass or plastic dish.
  5. Place chiles and remaining ingredients, except the orange, in a blender container and blend, at low speed, until smooth.
  6. Pour over chops. Cover and refrigerate at least 3 hours, spooning marinade over chops occasionally.
  7. Set oven control to broil.
  8. Remove chops from marinade and sit marinade aside.
  9. Place chops on rack in a broiler pan.
  10. Broil, with tops of the chops 3 to 5 inches from the heat, until light brown, about 10 minutes.
  11. Turn the chops and brush with the marinade.
  12. Broil until chops are done, about 5 minutes longer.
  13. Garnish with orange wedges and serve.
