Sirloin Citrus Salad

Sirloin Citrus Salad
Ingredients Measure
Top sirloin steak; 1" thickboneless 1 pounds
Olive oil 1 tablespoon
Romaine; torn in bite-sizepieces 4 cup
Orange juice 2 tablespoon
Red wine vinegar 2 tablespoon
Oranges; peeled, separatedinto segments 2
Walnuts; toasted ¼ cup
Strawberries; optional,sliced  
Honey 2 teaspoon
Dijon mustard 1¼ teaspoon

Preparation

  1. Prepare the Citrus Vinaigrette by thoroughly combining all ingredients.
  2. Makes about 1/3 cup.
  3. Prepare the salad: Cut the beef into 1/8" strips; cut each strip in half.
  4. Heat oil in a large nonstick skillet over medium high heat.
  5. Stir fry beef (1/2 at a time) 1 to 2 minutes.
  6. Remove with a slotted spoon; season with salt, if desired. Toss lettuce, beef and oranges in a large bowl. Sprinkle with walnuts and drizzle with the Citrus Vinaigrette.
  7. Garnish with strawberries, if desired. Serve immediately.
