Habanero Citrus Shrimps

Serves 6

Habanero Citrus Shrimps
Ingredients Measure
Large Tiger shrimp: shelled and deveined 3 pounds
Tequilla 4 ounce
Limes: juice only 4 large
Fresh cilantro or Parsley: cleaned and chopped 1 bunch
Olive oil 1 ounce
Oranges or tangerines: zest only 2
Dried habaneros: crushed 2
Brown Sugar 1 tablespoon
Citrus fruit pieces: for skewer  
Garlic cloves: for skewer  
Onion pieces: for skewer  

Preparation

  1. Combine all ingredients in a non metalic bowl except shrimp - mix well.
  2. Marinate shrimp for 1 hour (not longer of they will become mushy)
  3. After marinating the shrimp, skewer with onions and cloves of garlic, chunks of oranges, limes and other citrus fruits as desired.
  4. Barbeque quickly on hot grill until shrimp turn pink and curl slightly.
